This January 25th is far from our first Burns Night celebration here at North Uist Distillery but it certainly feels like a milestone one; the first Burns Night with our very own uisge beatha flowing through the stills, and the first where we’ll be raising a toast to the man himself with a glass of North Uist Distillery new make spirit!
While it’s a few years off being the golden liquid that Robert Burns dedicated many a verse to (and we’ll probably be following it with a drop or two of a more aged scotch) being able to fill a glass with our very own spirit to toast the godfather of Scottish whisky on his 266th birthday is pretty momentous!
The last year has been a whirlwind of preparation and installation, starting with our historic listed building being gently tweaked and adapted for the next chapter in its centuries-long story, and ending with the first casks being filled and tucked away in the stables to mature as the year came to its close.
Now it’s time for us to settle into the daily routines of distillation’ turning golden grains of barley into crystal clear new make spirit ready to quietly rest in a hand-picked selection of casks new and old, taking on their flavours in the salty sea air that blows in off the Atlantic and keeps our building the perfect environment in which to create exquisite Hebridean whisky.
